PV Tasting Notes

The Cote Sud is a 225L Barrique fermented 100% Merlot coming from a vineyard planted in 1980, sporting a dark ruby colour ripe fruit explodes from the glass, spice laden blackberries, chocolaty cherries and fresh garrigue herbs, this is all about the fruit, very forward and full flavoured, this pleasure bent wine almost embraces the palate, gently crushed soft black fruits with perfect acidity to keep it in check, this is a fabulous wine and displays why so many people are enamoured with Merlot, and for others would help restore this grape’s good name.

 

This stunning Merlot is perfect for Fillet of Beef Marchand de Vin (with wine and bone marrow) Roast Fillet of Beef but avoiding Beef Wellington, pasty dulls the palate. Roast lamb and Venison. However this is quite simply a joy to drink without any food accompaniments.
