The 2005 Heytesbury is a beautiful, deep dark plum colour, as always balance, elegance, complexity and restrained power are the hallmarks of Heytesbury Cabernet, and this 2005 vintage wine is one of the finest they have ever produced. The aroma is very fragrant, with lifted blackcurrant and fresh subtle green “peppermint” leaf tones with blueberries, violets, coconut, cumin seeds and thyme which all meld together into the background with rich oak perfumes. The palate is currently very tight with fresh acidity and a slight creaminess to the mid-palate with saddle leather, liquorices, dried herbs, mineral, and massive power in the mouth. The tannins are firm and the wine finishes dry with some pretty flavours of violets, dark berries and a hint of mandarin. The linear nature of the palate coupled with a firm tannin structure will ensure long continued development and fabulous long term cellaring potential, but the wine really must be left alone for some years yet. Anticipated maturity 2013 through 2045.
This beautiful Cabernet blend is best with Rack or Saddle of Lamb, will also suit very well Roast Leg of Lamb, Shoulder or Fillet of Beef, Sautéed calf’s liver, Partridge or Grouse, fried sweetbreads or Kidneys with a rich sauce e.g. bearnaise, will also suit roast ribs of Beef or grilled Rump.
