This is amazing… black, with a touch of black/amber colour and full on, in your face, sweet and succulent, unctuous with almost too much flavour to take in one mouthful. This really needs to be sipped, slowly savouring every drop when finishing off the meal, very complex array of aromas and flavours. It pours like glycerine, sticking to the glass, truly remarkable stuff needing no accompaniment. Just a little of this elixir goes a very long way and the flavours are still hanging around in your mouth 10 minutes after it’s been swallowed.

The brown/black 1905 Pedro Ximènez has the viscosity of motor oil. Glass-coating with a mind-boggling perfume of English toffee, caramel, dates, figs, and milk chocolate, it has extraordinary depth, concentration, and length. It is a true tour de force. These splendid wines are very limited with only 200 bottles of each available to the USA market.
Only if you really must, most desserts, sweet cakes or ice creams. It perfectly accompanies vanilla ice cream, red fruits (like strawberries) and is the ideal complement to dark chocolates.
