Re-tasted 04/08/2011
This now smells of mint and apple, well matured and nicely developed, it offers a cooling, surprisingly soothing palate impression, the high toned fruit has mellowed and it now resembles a fine Sancerre without the (cat pee) aromas. The lime and grapefruit rind are still there, but more subtle, more gentle, finishes with a soft bittersweet edge, this can be enjoyed for at least the next year or so, maybe longer.
Very pale bright green to yellow. With intense aromas of sweet lemongrass, gooseberry, guava, grapefruit and of course lifted passion fruit, along with this wines distinctively smoky mineral (from barrel fermentation), herbaceous, almost asparagus-like aspects. Forward, fruity and herbal, with juicy but fleshy tropical and berry fruit flavours countered by cashew nut. Finishes with refreshing citrusy acidity and excellent persistence. April 2008

This world class Sauvignon will perfectly suit whitebait, avocado with prawns or crab, bouillabaisse, gazpacho, hors d’oeuvres, Thai food, smoked trout, quiches, hake, herring, mackerel or snapper.
Watershed Wines has been set up by a syndicate of investors, and no expense has been spared in establishing the vineyard and building a striking cellar door area, with a 200 seat restaurant recently completed with beautiful views over the vineyards and surrounds. The medal and trophy tally they have accrued to date is testament to the commitment behind this exciting new winery. Situated towards the southern end of the Margaret River region, its neighbours include the famed Leeuwin Estate and Voyager Estate.
