The 2006 Senses SBS is another wine which has developed really well, now fully mature, this more resembles a white Graves. Barrel fermented and aged in new and seasoned oak but given less lees contact, this is elegant, slightly smoky, with gently roasted nut, melony and honey scented nose. The palate shows some tropical fruit is very well balanced, with medium body and a long flavourful finish.
Pale green/yellow colour, musky, floral and quite incisive on the nose, with an array of fruit lemongrass, gooseberry, lychee and herb qualities: in the mouth pear, green papaya, mango, basil and curry leaf. A silky mid-weight palate showing precise, tangy fruit flavours lifted by bright acidity and dusty mineral notes. The interplay of fruit, mineral and herb tones is really enjoyable, nicely done. A truly classic wine, would suit all manner of light Tapas dishes, Escabeche of Sardines, Battered Squid, Basque squid stew, Hake with hop paprika dressing, Catalan Fish Stew, Paella, Tortilla, Andalusian Pork, White Bean and Chorizo Soup or even roast Spanish style chicken.
Watershed Wines has been set up by a syndicate of investors, and no expense has been spared in establishing the vineyard and building a striking cellar door area, with a 200 seat restaurant recently completed with beautiful views over the vineyards and surrounds. The medal and trophy tally they have accrued to date is testament to the commitment behind this exciting new winery. Situated towards the southern end of the Margaret River region, its neighbours include the famed Leeuwin Estate and Voyager Estate.
