People are beginning to be shocked by encounters with top-flight Merlot from Australia, it really doesn’t happen very often. The 2004 Bissy Merlot from Woodside is a tiny production (150 case cuvee) knock-out effort from the Margaret River that is aged in 100% New French oak, exhibiting a dark ruby/purple colour in addition to rich aromas of berry fruit, tobacco leaf, chocolate, and subtle herbs. This fleshy, voluptuously-textured, hedonistic Merlot will provide immense pleasure over the next 6-10 years. Independently rated as "Australia's Best Merlot released" in 2007.

This lovely Merlot is perfect for Fillet of Beef Marchand de Vin (with wine and bone marrow) Roast Fillet of Beef but avoiding Beef Wellington, pasty dulls the palate. Roast lamb and Venison. However this is quite simply a joy to drink without any food accompaniments.
