PV Tasting Notes

The annual hand crafted production of the Woodside wines are only around 150-400 cases of each of the four varietals, all aged in 100% New High Grade French Oak. The Baudin Cabernet Sauvignon (a 300 case production cuvee) possesses great purity, a striking bouquet, multi-layered fruit, enormous volume and intensity and at the same time, it is a strikingly elegant and well-proportioned blockbuster. This stunningly pure 100% Cabernet tastes like liquid crème de cassis intermixed with liquorice, roasted coffee, black olive, and cardamom spice. It should continue to develop and drink well for 12-20 years, but who will be able to hold onto it that long. Look out at Cullen and Moss Wood, the new kids on the Margaret River block have fully arrived, this winery may become The Screaming Eagle of Australia.

Given that this wine was ranked with a equal rating to the 2004 Penfolds Block 42 Kalimna Cabernet which is currently selling for £3,200.00 per dozen under bond, we think this represents an astonishing purchase.

This wonderful Cabernet is best with Loin of Lamb cooked with lemon zest, garlic and fresh mint, will also suit Roast Leg, Rack, Shoulder or Saddle of Lamb, Fillet of Beef, Partridge or Grouse, fried sweetbreads or Kidneys with a rich sauce e.g. béarnaise, will also suit roast ribs of Beef or grilled Rump and any hard Cheese especially Cheddar.
