This Cabernet Sauvignon is 2-3 years away from seriously enjoyable drinking. It is a dense, full-bodied, a bit of a bruiser of a wine, with an opaque colour, and a promising but restrained bouquet of minerals, smoke, and blackcurrants. Full-bodied, rich, and intense, as well as slightly tannic and backward, it is a wine made for the long term rather than immediate drinkability. This is an immensely impressive Cabernet Sauvignon. 250 cases made. Tasted Sept 2006

A beautifully made wine, the class shines through. 90 points - Robert Parker, Wine Advocate Among the reds, the 2002 “The Baudin” Cabernet Sauvignon offers an elegant, Bordeaux-like style featuring red currants and cedar. Currently tight but harmonious, it should blossom with 2-4 years of cellaring and drink well for a decade or more thereafter.
This wonderful Cabernet is best with Loin of Lamb cooked with lemon zest, garlic and fresh mint, will also suit Roast Leg, Rack, Shoulder or Saddle of Lamb, Fillet of Beef, Partridge or Grouse, fried sweetbreads or Kidneys with a rich sauce e.g. béarnaise, will also suit roast ribs of Beef or grilled Rump and any hard Cheese especially Cheddar.
