The 2003 Woodside Cabernet is one of the finest Cabernet I have tasted from the Margaret River region, it possesses a dense ruby/purple colour, as well as striking aromatics, consisting of black truffles, dried berries, and pain grille, after a few minutes the leather and tobacco notes come forth aged in 100% New French Sequin Barrels, which has beautifully integrated, and a plump, full-bodied, rich, concentrated textural style, this has great individuality as well as soul. This Cabernet Sauvignon is 2-3 years away from seriously enjoyable drinking. It is a dense, full-bodied, a bit of a bruiser of a wine, with an opaque colour, and a promising but restrained bouquet of minerals, smoke, and blackcurrants. Full-bodied, rich, and intense, as well as slightly tannic and backward, it is a wine made for the long term rather than immediate drinkability. A super clean mix of ripe blackcurrant, cassis and mulberry fruit, highlighted by sweet French oak. A beautifully made wine, the class shines through.
This wonderful Cabernet is best with Loin of Lamb cooked with lemon zest, garlic and fresh mint, will also suit Roast Leg, Rack, Shoulder or Saddle of Lamb, Fillet of Beef, Partridge or Grouse, fried sweetbreads or Kidneys with a rich sauce e.g. béarnaise, will also suit roast ribs of Beef or grilled Rump and any hard Cheese especially Cheddar.
