Now deep garnet brick coloured, meaty, leathery, more gamey aromas over damp earth, with hints of espresso coffee and spice. The palate offers a generous amount of mature flavours, of green tea, incense, bacon fat and blueberry, filling the mouth with flavours, excellent weight with still some grainy tannins, the finish is long and harmonious. The dense ruby/purple-hued Watershed 2002 Shiraz reveals remarkable intensity along with beautifully pure, cigar smoke-tinged black currant fruit, and liquorice notes. Medium to full-bodied, layered, and rich, with a terrific savoury mouthfeel, this is a stunning wine to drink over the next decade. Tasted April 2005

This excitingly elegant, purple-coloured 2002 Shiraz reveals a gorgeous perfume of blackberry, white pepper, and a hint of subtle oak. Feminine and sexy, it is both flamboyant and immensely satisfying, light to medium bodied, a silky and spicy flesh bomb that should drink well for 5-6 years. For the price, it offers unbelievable value.

This gorgeous Australian red is best served with T-bone steak, roast fore rib, well hung game (Venison, Hare, Rabbit) strong Cheese’s e.g. parmesan, Pasta dishes with strong or piquant sauces, alternatively truffle or porcini fungi sauce, beef stew’s, stroganoff, cassoulet, stuffed cabbage, Chilli, BBQs, or kebabs and will stand up to most curry.
Watershed Wines has been set up by a syndicate of investors, and no expense has been spared in establishing the vineyard and building a striking cellar door area, with a 200 seat restaurant recently completed with beautiful views over the vineyards and surrounds. The medal and trophy tally they have accrued to date is testament to the commitment behind this exciting new winery. Situated towards the southern end of the Margaret River region, its neighbours include the famed Leeuwin Estate and Voyager Estate.
Maturation in New French and American oak barrels
