PV Tasting Notes
I was really so impressed by the Watershed 2002 Cabernet Merlot Blend, I found it in a flight of about 180 different wines from 16 separate producers during an afternoon tasting session in Margaret River, it ranked in the top four wines along with their Shiraz. It represents a stonking value in a Bordeaux-styled red of considerable complexity and elegance. Its deep blue/purple colour is accompanied by sweet aromas of crème de cassis, lavender, and touches of spice box. Gorgeously textured, classy, and noble, with precise flavours, terrific definition, and a long, concentrated finish, this beauty is a steal in terms of pricing. It would be interesting to insert as a ringer in a blind tasting of top classified growth Bordeaux.

This boasts a deep plum/purple colour in addition to a stunningly sweet bouquet of blackberry liqueur, and toasty new oak. Complex, loaded with ripe black fruits, full body, great purity, an opulent, super-concentrated mid-palate and finish, nicely rounded tannins with plenty of new oak to support. Drink it over the next 5-6 years, although I’m sure it will last longer.

Perfect for roast lamb with mint sauce, or pink grilled lamb chops, Roast Rib of Beef, Fillet or a good aged sirloin and even an Italian styled pot roasted veal dish, alternately Irish stew. Will also suit a richly sauced duck breast or Venison dish and any aged cheese such as Parmesan.
Watershed Wines has been set up by a syndicate of investors, and no expense has been spared in establishing the vineyard and building a striking cellar door area, with a 200 seat restaurant recently completed with beautiful views over the vineyards and surrounds. The medal and trophy tally they have accrued to date is testament to the commitment behind this exciting new winery. Situated towards the southern end of the Margaret River region, its neighbours include the famed Leeuwin Estate and Voyager Estate.
