The wine is lighter, but satin textured and regales the palate with waves of minerality as the quality French oak comes in on the long finish, drink this superb value wine now and through 2013. Classically styled Chardonnay and best suited to things like, Smoked Char-grilled Salmon, Grilled Lobster, Grilled herbed Spatchcock, Barbequed king Prawns, Prawn Risotto, Vegetable Terrine, Asparagus Quiche, or even Chicken and Mushroom pie, Chicken, Mango and Rocket Salad or a Gruyere styled cheese.
Winemaker, David Creed, who graduated top of his class at Roseworthy “The Winemaking University”, has a simple approach "Produce the best fruit possible in the vineyard; handle the fruit gently to preserve fruit character; minimise extraction and allow the wines to express the individuality of the vineyard and each growing season". Rochford consistently produces wines that express the unique conditions of their cool-climate vineyards and each individual vintage. The wines are characterised by concentrated, complex fruit underlined with firm structure to ensure longevity.
This wine is produced from a single Yarra Valley vineyard. After crushing and pressing the juice was cold settled to a bright level. This juice was racked into small French oak barrels and cultured yeast was added. Following fermentation the early addition of sulphur dioxide has prevented malolactic fermentation. The wine was aged on yeast lees without stirring for 7 months. The wine was bottled in early December 2005.
A warm summer followed by a mild and sunny autumn produced finely structured grapes with excellent flavour definition.
